1 roast chicken, flesh removed and diced
4 stalks celery, chopped
2 cucumbers, diced
2 avocados, diced
Salt and pepper to taste
If you’re feeling adventurous, try a teaspoon of smoky paprika or cumin
1 iceberg or Cos lettuce, washed and cored, leaves carefully separated out
Mix all ingredients together, then spoon into lettuce cups and wrap up firmly in baking paper.
Leftover roast chicken is also great for turning into these simple, delicious meals which can be eaten with your hands like a sandwich.
